In case anyone is still wondering if Dean deliberately swung at Death or if he was “aiming for Sam and missed,” Jensen makes it very clear it was a deliberate choice to attack Death, and Jared states clearly that it was an intentional parallel to Swan Song (when Sam does something dramatic for love of his brother, to save him, and to NOT kill him) and Jensen nods, confirming that parallel.

Jensen is answering a question about the thought process Dean went through in trying to figure out how to get rid of the Mark. […]“and his brother decided to throw some pictures down on the floor, and he couldn’t take it, and he then decided to do kind of the…the only thing he could think of at that moment” (swing the scythe at Death).”
